Brilliant pale lemon colour. Intense stringent aromas of peaches, white flowers, stony minerals and a hint of fresh sea breeze. The palate offers an energetic combination steely acidity with charming peachy fruit and stony minerals. It finishes clean with a mouth watering acidity and long complex persistency.
The grapes were handpicked during early morning to preserve its charming aromatic character. Whole bunch pressing in pneumatic press. Cold settling for 16 hours, racked off its heavy lees before inoculating with neutral yeast strains. Temperature controlled fermentation at 14-16ºC for 16-20 days. Aged on its lees for 6 month with occasional stirring. Clarified and filtrated before bottling in late spring.
